Catherine Scorsese Cooks Spaghetti Sauce

Scorsese's mother Catherine, who was born on Elizabeth Street, appeared as Tommy (Joe Pesci)'s mother, and she famously cooked for the cast and crew of her son's movies. When Jimmy Kimmel asked Martin Scorsese about shaving garlic with a razor—that's what Paul Vario (played by Paul Sorvino) does in prison—the director said, "My mother made a dish called chicken with lemon and garlic and if you go to Francis Coppola's restaurant he has it on the menu... It's pretty good, pretty close... The garlic was cut so thin and she would put it on the chicken and the chicken would be roasted... and the garlic would blacken and then disappear into the lemon juice. It was delicious." Mmmm.
Catherine Scorsese died in 1997, at age 84. Martin Scorsese published a book of her recipes, and his famous friends remembered her cooking: Robert DeNiro said, "She made the best pizza I've ever eaten. I always wanted to serve it at TriBeCa Grill," while Harvey Keitel said, "In my memory, Catherine was the epitome of a warm, loving Italian mother. She enjoyed watching me eat as much as I enjoyed eating her cooking." And Pesci said, "Katie was one of the sweetest ladies I ever met. She was a true innocent. She never did anything bad; she never knew anything bad. In terms of her cooking, it's a toss-up as to who's a better cook, Katie or my mother."

THE SCORSESE FAMILY COOKBOOK

The Pasta Sauce
The recipes in Catherine Scorsese's cookbook, 
''Italianamerican'' (Random House, 1996, $21),                                   range from pasta e fagioli to ricotta pie. The book, 
also by Georgia Downard, contains the standbys 
of thousands of southern Italian immigrant 
households that, by adding or withholding 
specific ingredients, intensely personalized 
each recipe.
The pasta sauce recipe, below, was included in 
the credits of a 10-minute Scorsese film, '
'Italianamerican,'' which recorded a visit by the 
director with his parents at their home. 
The movie was shown at the New York Film 
Festival in 1974.

Catherine Scorsese's Pasta Sauce

Total time: 1 hour, 45 minutes
1 large onion, peeled and minced
2 tablespoons olive oil
3 cans (28 ounces each) whole tomatoes 
in thick puree
2 cans (16 ounces each) tomato sauce
2 cups water
1 can (6 ounces) tomato paste
3 large cloves garlic, peeled
2 carrots, peeled
1 all-purpose potato, peeled
5 tablespoons minced fresh basil,                                                             or 1 tablespoon dried
5 tablespoons minced fresh parsley,                                                         or 1 tablespoon dried
Salt to taste
Cayenne pepper to taste
1/4 cup fresh bread crumbs
1/4 cup milk
6 ounces ground pork
6 ounces ground veal
6 ounces ground beef
1 large egg, lightly beaten
1/4 cup freshly grated Parmesan.
1. In a 6-quart, or larger, saucepan or casserole,                          cook the onion in the oil, stirring occasionally, 
for 5 minutes.
2. In a blender or food processor, puree tomatoes 
and sauce. Add tomato mixture to pan along with 
water, tomato paste, garlic, carrots, potato, 
3 tablespoons of basil, 3 tablespoons of parsley, 
salt and cayenne to taste. Bring to a boil, reduce to 
a simmer and, stirring occasionally, cook, partly 
covered, for 30 minutes.
3. In a small bowl, soak the bread crumbs in the 
milk until softened.
4. In a large bowl, combine bread-crumb mixture 
with meat, egg, Parmesan, remaining 2 tablespoons 
basil and parsley, salt, cayenne and 1/2 cup of sauce. 
Gradually shred and add meat mix to sauce, a little 
at a time. Partly cover, and bring sauce to a simmer, 
stirring occasionally, for 1 hour. Before serving, 
remove garlic cloves, carrots and potato.
5. Use about 2 cups of sauce for each pound 
of pasta.
Yield: about 12 cups.

Stallone was born in Hell's Kitchen, New York City, the elder son of Frank Stallone, Sr. (1919–2011), a hairdresser and beautician, and Jacqueline "Jackie" Stallone (née Labofish), an astrologer, former dancer, and promoter of women's wrestling. Stallone's father was born in Gioia del Colle, Apulia, Italy, and immigrated to the United States in the 1930s. Stallone's mother is of half French (from Brittany) and half Russian Jewish (from Soviet Union, Odessa) descent.  His younger brother is actor and musician Frank Stallone.
Complications his mother suffered during labor forced her obstetricians to use two pairs of forceps during his birth; misuse of these accidentally severed a nerve and caused paralysis in parts of Stallone's face. As a result, the lower left side of his face is paralyzed – including parts of his lip, tongue, and chin – an accident which has given Stallone his snarling look and slightly slurred speech. Stallone was baptized Catholic. Around the age of 4, Stallone was flat-footed and put in a tap dancing school by his mother. His father moved the family to Washington, D.C. in the early 1950s, where he opened a beauty school. His mother opened a women's gymnasium called Barbella's in 1954. Stallone's parents divorced when Sylvester was nine, and he eventually lived with his mother. When Stallone was 16, he scored poorly in school and his mother got him a summer job at her beauty salon.  He attended Notre Dame Academy and Lincoln High School in Philadelphia, and Charlotte Hall Military Academy, prior to attending Miami Dade College and the University of Miami .

Sylvester "SLY" Stallone


Stallone gained worldwide fame with his starring role in the smash hit Rocky (1976). On March 24, 1975, Stallone saw the Muhammad Ali–Chuck Wepner fight. That night Stallone went home, and after three days and 20 straight hours,  he had written the script, but Stallone subsequently denied that Wepner provided any inspiration for it. Other possible inspirations for the film may have included Rocky Graziano's autobiography Somebody Up There Likes Me, and the movie of the same name. Wepner filed a lawsuit which was eventually settled with Stallone for an undisclosed amount. Stallone attempted to sell the script to multiple studios, with the intention of playing the lead role himself. Irwin Winkler and Robert Chartoff became interested and offered Stallone US$350,000 for the rights, but had their own casting ideas for the lead role, including Robert Redford and Burt Reynolds. Stallone refused to sell unless he played the lead character and eventually, after a substantial budget cut to compromise, it was agreed he could be the star. 
Rocky was nominated for ten Academy Awards, including Best Actor and Best Original Screenplay nominations for Stallone. The film went on to win the Academy Awards for Best Picture, Best Directing and Best Film Editing.

  The greatest soup ever made! The greatest soup ever made, that’s quite a statement and it’s debatable, and though I’m saying this I know that it may not be, but everyone has their own taste and though I love any number of other wonderful soups like; Vietnamese Pho, Chinese Roast Duck & Wonton, good old American Chicken Noodle Soup and others, if I was forced to pick one as my # 1 very favorite soup of all, it would have to be this, Italian Wedding Soup. So if it’s not the World’s greatest soup of all (Vietnamese Pho maybe) then it is without question one of the greatest anyway. And how can it not be great, made of tasty chicken broth with escarole and the thing that puts it into the greatness category, the little Meatballs? An Italian Soup that has Meatballs in it, what’s not to love? Well, I guess it depends who you ask, but if you ask an Italian-American, guess what? “Italian Wedding Soup is the greatest soup of all!” The combination of fresh homemade chicken broth, with pieces of chicken, escarole and of course those yummy little meatballs that every Italian holds so dear, that’s Italian Wedding Soup, and the first bowl I ever had, wow! I was a little boy and my mom made it for us. “Here Daniel, Italian Wedding Soup, it has little meatballs in it,” Mommy said as she placed the bowl of soup down before me. I couldn’t believe my eyes, little meatballs in soup, what could be more magical to a little boy of I don’t know five? Yes, I remember that first bowl, and I don’t know how many hundreds of bowls of this most pleasing soup I’ve had since then, too many to count, but everyone just as tasty and whimsical as the other. It’s the Meatballs, it’s Italian Wedding Soup and there’s not any soup that’s better. I just love it. How bout you?

Sinatra Spaghetti Garlic N Oil

FRANK'S PASTA with GARLIC OIL & ANCHOVIES
 
  • ¼ cup olive oil
  • garlic cloves
  • small yellow onion, chopped (approximately ¼ cup)
  • 10 anchovies, chopped
  • Salt and freshly ground black pepper, to taste
  • ½ cup chopped fresh basil
  • 1 Tbsp chopped fresh flat-leaf parsley
  • 1 lb fusilli, cooked al dente
  • 4 Tbsp seasoned breadcrumbs
 
  1. Heat the oil in a large saucepan over medium flame and sauté the garlic until golden, about two minutes. With a slotted spoon, remove the garlic. Add the onions to the saucepan and sauté for three to four minutes, until soft and translucent. Add the anchovies and 1 ⅓ cups water. Bring to a boil, reduce the heat to low, cover, and simmer for four minutes, occasionally stirring. Season to taste with salt and pepper. Add the basil and parsley. Uncover and simmer for two minutes, and remove from the heat.
  2. Heat a non-stick skillet over medium-high flame, add the breadcrumbs, and toss gently until lightly browned.
  3. Place the cooked fusilli in a large serving bowl. Spoon the sauce over the pasta and toss to mix. Sprinkle with the toasted breadcrumbs and serve immediately.
